Is there a way to change the dimension numbers to be parallel with the actual line you are dimensioning? I do not want to flip the actual lines going to the object with the text. It is supposed to look sideways on vertical lines of objects.

There are two dimension alignment systems used in 2D drawings, one is unilateral meaning all dimension read from the bottom of the sheet and two is aligned, dimensions read from the bottom (for horizontal dimensions) and from the right hand side of the sheet (for vertical dimensions). Fusion 360 does not have a method of changing these styles per drawing. However, if you create a drawing using the ASME sheet you will get unilateral dimension alignment and if you use ISO sheet you will get aligned dimension alignment. You have the ability to use either inch or metric dimensions in either one.

Is there a way to put the number on either side of the line? I have some dimensions that are super cramp and I can't find a way to flip the number text to the other side of the line

If you are using an ISO template, I do not know of any method to flip the dimension to the opposite side of the dimension line.

And do you know how to add a Reference Grid (A1, B2, etc) on the edges? I doesn't appear intuitive to find that switch at all

Mapped Reference Borders are standard in the ISO template as shown below. The ASME template does not have this type border but can be created by developing a new template. This ability is only available if you have a Fusion 360 subscription license. I think you can do it with a student and startup license but I have no way to test this.
