Toolbars will be less and less supported in the future and might one day be completely unsupported. (it is more likely than that they will regain full support from Autodesk)

Or as @pendean said. You can change the DIMLAYER system variable are make your own dropdown menu in the CUI for your toolbar, where each option changes the DIMLAYER variable to another layername. That might take some help from the people over at the customization forum.

I use toolbars over the ribbon, and I thought there used to be a drop-down layer menu within the dimension toolbar itself for the dim layer override separate of the main layer drop down menu in the layer toolbar. I have spent about an hour on the web and forums but not having any luck. It was nice leaving one on the layer I was modeling on and then having my dim layer selected with the override so I can model and dimension without changing layers back and forth.

Probably on an add-on or customization you no longer have. Plus it appears you may not know how DIMLAYER works maybe looking at your description about all that toggling? Or do you dimension on many layers in a single DWG file (all eggs in one basket type drafting style)?

It takes about 5-minutes to add the desired DIMLAYER variable setting to your CUI commands list, then drag/drop it anywhere you want it/them to be, toolbar or elsewhere. Why not just do that?

The issue with the Dimlayer dropdown is that it cannot be added to toolbars. But it could be added to the QAT.

It's named Dimension Layer Gallery...

I have 5 different dim layers setup, and model in about 15 that translate over to an automated nesting program for our router. Can you point me in a direction of how to make that edit. I started down that path, but stopped before I messed something up, and I still have work to do.

Why don't you minimize the ribbon? That's what this button does

I personally like this look/option on my dual 27" monitors:

Others like this, with the QAT below (which is basically a giant toolbar that can be customized to hold 50+icons)

To float a Panel, any panel, just click/hold here then drag:
