Just to make sure it isn't a bug in a printer driver, have you tried chosing another PDF-printer?

I also have had some problems with the standard DWG to PDF and i solved it by using the free CUTEPDF driver.

You can download this driver for free www.cutepdf.com

Your chosen PDF viewer app has that "box smart text" or words to that effect on. Hunt for it and turn that feature off.

There is nothing in AutoCAD 2016 to do it for you.

I have found a few of the PDF readers do not like the SHX fonts normally used in AutoCAD. I tested two versions of ACAD 14 & 17 with all the different printer drivers. The results were all the same. If the default font was txt.shx resulted in boxed text in the PDF reader (using PDF-Xchange). changing the font to Arial removed the boxed text. This reader did not have a setting for "smart text".
