What tool do i've to use to make this surface in the right way?

smooth and without creases?

It's not a matter of tools; it's a matter of proper use of the tools.

You did it with 3 square surfaces and that's good, but you cannot reach a good continuity building them only on curve: the central one should use the edges of the adjacent ones.

P.S. For a better visual result, you should switch your Diagnostic Shading tessellator from Fast to Accurate, and reduce its tolerance to 0.01
