I saw this post on Google+, saying it is national grilled cheese day. Wish I would've known and I wouldn't have planned scallops and baked brie and mushrooms for dinner tonight.

That's intriguing.  Now to decide if I really need to make my own "American" cheese . . .

Made some last week that were sinfully awesome.  My Dr. would have had a fit if she'd seen them.

Buttered sourdough bread, crispy thick sliced bacon, grilled onions, colby jack and muenster cheese.  Placed on the griddle until they were gotting crisp but not too brown, then lifted them up and sprinkled shredded parmeson, romano and asiago on the griddle.... placed the sandwich back down on it.  After that got all golden and crispy I turned them over and repeated the process.  The finished sammies were then topped with mayo, lettuce and roma tomatoes.
