I know I can turn a panel into a cladding by going to geometry-->contour definition---------->check on the box "cladding/face"
Can I do this for multiple panels at a time? i.e. I want to select 50 panels, and change them all into claddings.

No but you can change them into curtain walls instead. The only difference is the additional possibility to add self-weight for them. In case you don't want this (and you have automatic self-weigh for the whole structure) add self-weight Z+ load for them in addition to Z- for the whole structure.
