For some reason, all newly drawn piping in the project I am working on has been highlighted in a thick blue color.
The pipe is supposed to be continuous green, you can see this color is interfering. It also prints out as shown, which is clearly wrong. What could have happened? Has anyone seen this before?

It appears as though there is a System Color Scheme being applied to your Views, which may be defined by a View Template (my guess as to why it's affecting multiple Views). In one of your Views under Properties, click "Edit..." next to "System Color Scheme". In the following dialog, if the color scheme for Pipes read as anything but "<none>", then this is likely the culprit.
You can click on the button and set it to <none>, but if it is grayed-out, it is being controlled by a View Template and must be corrected there. If so, cancel that action and click on the button for "View Template" under Properties. In the following dialog, scroll down to "System Color Schemes" and either uncheck the box (to remove control of this element from the View Template, giving you control per View) or click "Edit..." and set the Pipes to "<None>".
