Does it do it automatically or is it something that has to be manually done?

The first of all you need to create parametric panel as family.
You can create it as Curtain Panel or as Generic Model. Using first case you can put it into created Curtain Wall by cell assignment. By second way you put panel into plan and change it's parameters.

Can you put components within the wall that make up the structure of the wall. For instance, wood or steel studs, top and bottom plates etc.?

I'm afraid I don't understand your question exactly. But using families you can create a lot of components. The best way of using families is creating Object Styles. Using this option set up a correspondence between Object style and Material. After that in Properties dialog for each element you can assign a category(it's the same as Object Style). Material will be assigned automatically according Object Style Table. Another way is to assign material for component not , but choosing directly from list of materials defined in current family file.
