I like when I start a wall, I get a dimension to the nearest entity. How can I change (and keep) the entity I choose? Let's say I need a wall to start 10'-0" from a wall face, but as soon as I cross a grid line, the dims re-snap to that?

If you are getting a temporary dimension to the correct location, say 1',
then as you move it you get 2' and so on, well you can just type in a
number, say 10'-4, then it'll start the wall 10'-4" away from that location.
So you don't have to move your mouse until you get the correct dimension,
just let it get started and then type in what you want.
