Are you selecting Cut Patterns or Surface Patterns, as you want Cut
Patterns? I typically do that at the Category level for walls, but it works
for me at the element level for one wall as well. The attached image shows
my settings to accomplish what you are describing that you desire.

When I Right-Click and go to "Override Graphics in View"
By Element: I choose Color: Yellow, Pattern: Solid Fill. The
wall does not show as "Yellow".
How do I show the wall type as Yellow?
