Elevation symbols use at least 2 levels of nested families. Therefore, first you need to duplicate the type, and then duplicate the type of callout. Then, edit the callout, and reload.

1) To create a new elevation body symbol, based on an existing one:

From the Project Browser, find Families > Annotation Symbols > "Elevation Mark Body_Circle" (for example). Right click > Edit. Change the circle for a hexagon. Save as "Elevation Mark Body_Hex." > Load into project.

2) To create an elevation type, based on an existing type:
From a view, select one of the existing elevation symbols. From the properties window, select Edit Type > Duplicate > give it a new name such as "Bulding Elevation 2 (Hex)". Click on the [...] button for "Elevation tag". > Duplicate > give it a new name such as "1/2" Hex". For the Elevation Mark parameter, select "Elevation Mark Body_hex : Filled Arrow". Close this window, and close the other window as well.

That will create a new elevation type for your project. To use it, the next time you activate the elevation tool, change the type of elevation using the type selector of the Properties window, choosing your new "Building Elevation 2 (Hex)". The next time you use it, that type will be the default.
