Each of the Disciplines in my group, Architectural, Mechanical, Plumbing, Electrical, Fire Protection have created a "Demolition Model" and a seperate file for "New Construction".
After researching it seems that most users are managing demo and new with Phasing. Can we merge our two files so that we have all in one Model?

Phasing is the way to go.
To merge the separate models, you can try to use Group>Link out to .rvt file, and then Bind the .rvt file into the other model. Make a Group out of everything in the model, then use Link to file.
Depending on the size/complexity of the model(s), you may see some problems--usually attributed
to a lack of RAM for large complex models when using the Group>Link out>Bind method.
But it is surely worth a try.
Just make sure everyone on the team understands and buys into the method before doing it!
This sounds like a complex project. Each discipline should try the Group>Link>Bind method, and then re-assign
elements into the correct Phase--Existing or New Construction in a single model per discipline.
Then, all the models should be linked together using Shared Coordinates.
A Team BIM Meeting/discussion is highly advised so you can offer these suggestions and hash through it with
everyone, get everybody on the same page, and then execute the plan. There will need to be a strong BIM leader
to organize and direct the team. Good luck!
