Complex Roof

Hello, does anyone know how I would create a roof with multiple slope at the ridge as shown in the attached jpeg's?

The same way you would do a gable.
Use slope arrows at the two ends of the ridge.

Ed, could you elaborate a little? Are you saying that I could make that all out of one "piece"?

I had trouble trying to create it myself using slope arrows.
All I can say is try shaping the roof using the massing tools with solids
and voids.
Look at how they constructed the pyramid mass in the library.
Then convert it to a roof.

The easiest way is to do massing to create the shape of the roof desired. Then you want to "create roof by face". I know that this sounds easier than it will end up being. However, I have found that creating the mass first on really complex shapes is the best way!
