Is it possible to set the text style and dimension style in a template so all tags and text are the same font or do you have to change each family and create your own?

You can set the default dimension style and text type in your template.  This would affect dimensions and text only in the project.  Tags, symbols and families can have varying text types so if you want the tags\families to match you would have to edit these as well.
