how to share an assembly

I am aware of the GAC, but if I have three programs, and all reference my helper class project, can I build all three
and throw all files into one folder and have it work?
.net must make some decision on if an assembly is compatible or not with a given program.
Can I control versioning so .net knows the new build is supposed to replace an old build?

I've read a lot on this, but the answer is not clear to me yet, any guidance appreciated.
