I keep getting this error when ever I try to symmetrize my model using Edit > Symmetrize in the modeling toolkit, even though the Symmetry seam is absolutely planar. I snapped all the verts to the center X axis, making sure retain component spacing was unchecked.

first of all, you should enable symmetry.
Still doesn't work. Must be a bug. I keep getting this error:

The seam is planar, symmetry is enabled. I just tried doing it on a default polygon sphere, so there's no way the symmetry seam couldn't be planar.

Simple solution to your problem.
1) Do not select an edge ring!
2) Just select one edge along the seam
3) Then go to the Modeling Toolkit and click "Symmetry" under the "Preview Loop/Ring".
