Lemme guess... ATI (Absolute Trash in Inventor) video card, right?

Or should that now be ATI (All Text Invisible)?

If you move your curser over a dimension does it light up?
when you plot does it show up?

I had the same problem in 5.3 and 6.
Not all the time, it but would come and go.
restart to fix. (sometimes it worked or reboot.)

Nvidia something card.

There is a solution. Get a different video adapter.

One workaround solution to poor graphics card:

Tools-application options-hardware select the Open GL driver. From time-to-time you may still have the problem simply close all files and reopen should fix it.

What is likely the case is that your background color is black and your text is very dark. This is the issue I have also. What I do to fix this, with limited results, is to change the color of the dimensions to "by layer'. This can be done through the dimstyle manager. Once you find which style is the imported style, you can then change the text color to whatever you want.
