How do I get ride of the yellow lines? (Please see the picture below)

You turn off the visibility of a sketch by finding it in the browser, right clicking on it and selecting Visibility.
I recommend that you not create those projected sketches in the first place.

The yellow lines appear for me even when I'm not using the Project Geometry tool. They appear when I draw a line on the edge of an existing feature. I don't understand the purpose of these lines and they get in the way of everything.
File -> Options -> Sketch
Uncheck the boxes for automatic projection

Hi! Please go to Tools -> App Options -> Sketch -> uncheck "Autoproject edges during curve creation."
