help me out w/ network licensing please

I need a little help understanding how the network license works. I have 5
cadguys doing cad 8-10 hrs per day. We are running stand alone on each of
these 5 seats with plot styles, menus, etc on a network server.

I have 8 engineers that need autocad periodically, but probably only 3 at a
time would need to be in autocad at the same time. Would I need a 3 node
license so these 8 engineers could share the 3 licenses? Do I have to own 3
additional seats of autocad to go with these 3 licenses? Sorry to be kind
of vague, but I really not sure how all this licensing works.

Yes, you would need a 3-node network license. You need to purchase the 3
seats of AutoCAD, but need to specify a network version, not standalone.
Note - there is a premium charged for network seats - Autodesk says it's for
the convenience the network version provides, but I really think it's their
way of getting a little back for the extra standalones they didn't sell...

Actually I think the premium for the Network License is a licensing fee for the third party LM software.

Can we get a network version that excludes the license manager ? We already have FlexLM....

No, the license manager is included on all disc media whether it is stand-alone or network. The 2008 versions have release 11.4.

Yes as Travis mentions you should not ignore it.
Just install it and make it work and be happy. It's possible to merge with
existing setups if needed.
