Getting a new server...

We are in the process of replacing our existing license server. The new
server will have a new name and mac address.
I can get a new license file with using the new mac address but all of our
existing installations are pointing to the old server. Is there any way to
have the existing installations point to the new server without
re-deploying?

Yes, it is very simple. The software will simply ask you for the new License Manager location when it can't find the one it is setup for. Input the information in the box and you will be set.

Alternately, you can change the LICPATH.LIC file in the application root folder and/or create a System Environment Variable pointing to your new server.

It's not a major deal. You should have a smooth transition. Good luck!
