New comp build for Maya 2015...

I just updated to Maya 2015 from Maya 2009 (yes, it has been a while) and at the same time I am looking to build a new computer to run it, but I am having a hard time deciding on whether to go with an i7 chip or dual xeons.

 

I am less concerned with render times and more concerned with workflow while animating and modeling large scenes.  Does anyone know if viewport2.0 would take advantage of multi threads across multi cores from the xeon, or would it be better with the higher single thread frequency of the i7?

 

My software priorities.  Maya 2015, Zbrush 4.7+, Adobe CC (Primarily Photoshop and Indesign, but also includes Premiere and After Effects)

 

My budget is right around $5000.  The current build idea...

 

SUPERMICRO MBD-X9DAi-O Extended ATX Server Motherboard Dual LGA 2011 DDR3 1600/1333/1066/800

 

2x Intel Xeon E5-2640 v2 Ivy Bridge-EP 2.0GHz LGA 2011 95W Server Processor BX80635E52640V2

 

4x (to start) Crucial 16GB 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) ECC Registered Server Memory Model CT16G3ERSLD...

 

PNY VCQK5200-PB Quadro K5200 8GB 256-bit GDDR5 PCI Express 3.0 x16 HDCP Ready Workstation Video Card

 

I would love to hear thoughts as to which way I should go, and reasons for those thoughts.  Any help would be greatly appreciated.
