Can someone please let me know where exactly these Logs will be tracked?
I see this is one of the new feature of the September release:
I tested my CO workflow even though the workflow sent out email notifications I did not see any entry in the System log.
So does that mean that it is being tracked on Database level where we (( the users and the Tenant Admins ) have no visibility?

This is correct Pnigam. All email traffic is logged on our servers. If there is a need to verify some email traffic, please contact customer support.

So if we are debugging some workflow script issues and would like to see if the email notification are being sent out or not by the scripts then we need to submit a support case to do so is that right?
Any plans for opening up tracking for email logs to the Tenant administrators in future?
