For this issue, the easiest work around is to sketch out the curve and then use the Patch Extrude command to generate this surfaces.
The results do seem a bit more 3D that I would expect. I'll log this with development to see if this is working as intended.
Before I go, I also wanted to note that if you edit the Tangency Weight field in the loft command for each profile, the results are drastically different.
