I like to use the Quick Properties window to tweak object coordinates, endpoints, etc. but if my mouse slips outside the qp window while I'm typing, it acts like I've hit the enter key - i.e. 'input is now complete' (even if I'm still typing).
I think the full-blown Properties window does not do that. Does everyone else only use the Properties window to modify entities (not the Quick Properties)?
QP all the time here and does as you describe though never really been a problem.
Maybe push your mouse a little futher to the side or take your hand off it when typing perhaps?
(Okay I am ready to be flamed by the one-handed-typing-mouse-moving-why-you-want-to-slow-me-down? crowd.)

Okay then, I'm not crazy. My mouse tends to drift once in a while - I guess I need to level my desk, ha!
I do get in a groove and type pretty fast sometimes...
I don't use QP but I do suffer from the same "throwing my mouse away when typing"-syndrome.
You are not alone 😉
