If you have objects that are assigned the plot style "Normal", they'll most
likely plot in color. "Normal" cannot be edited, so in the AIA layer
standard that accompanies ADT, and in the default display control settings,
NOTHING is assigned to "Normal". But if you have an object that perhaps
originated in another drawing and was assigned a plot style that is not
listed in the AIA Standard.stb plot style, it will automatically be assigned
"Normal".
Do a search first in Layer Manager and sort on the plot style column. If you
see "Normal" listed there for anything, change it to one of the AIA
Standard.stb plot styles. After that if you still have objects plotting in
color, select them one at a time and check their display settings for that
particular view, paying attention, once again, to the plot style column.

The AIA Standard.stb plot style is supposed to be a monochrome plot style,
but several objects in both paper space and model space print in color
anyway and print in color on multiple plotter/printers even when the
plotter/printer is set to monochrome. Any ideas how to force the drawing to
plot in monochrome? What am I overlooking?
