I think Autodesk is trying to recreate standard drafting procedures. How about
standard single line valve representation. and not the outline of the valve.
Look at your own Schematic piping symbols, you got it correct there. Just do
the same on the Mechanical Piping side. Same with the scaling feature too.

this should be a top priority
as nice as the 3d models look it is the 2d
plan we get paid for ...
is there anyway to create a 2d valve that would mask the pipe and the 3d
valve
we need a rise and drop that is visible on a 3/4" pipe

Using Content Builder - modify - change the block
assigned to top from "top" or "plan" to "symbol" That will do
it.
