well, I understand, you don't have GIS-data like SHP or SDF or from a database like MS-SQL-Server or Oracle attached, your geometry is directly in the drawing and the MS-Access file is just linked to some objects in the drawing. I have not played this way for years now, so it was lost from my remembering.
And sorry, I guess there you can't modify anything for the color themes.
What you might do instead (means switching to new technology, and getting a lot more functionality): export your data as SDF and use the FDO-technology (using command _MAPCONNECT) to get the SDF-data displayed, to get the MS-Access data bound, then join them and create the thematic mapping this way.
If you are used to it it's minutes, if not I would spent some hours or a training, but with the result of a lot more flexibility and performance.
