I have LT2000 on my machine and have been asked to import these files into my model and after it is imported, not only does it black out the space, but then does not allow me edit anything. if I erase, it deletes the whole image. can anyone help?

Open the raster image in another application where you can
see the image in full, select all then Edit>Copy.
Open LT, Edit>Paste.

That's all you need to do.

I've done this and the image(scanned to bitmap) comes into drawing as whole with no way of editing. I can add text, but original image remains and cannot be changed.

That's because AutoCAD is not an image editing program. Use Paint or
Photoshop or something like that instead.
