Different versions reference the same Aedata?

For example, can AcadE2014 and AcadE 2013 reference the same aedata folder on the network?

You can point to same folder location (i.e. AEDATA folder or library folder) for different versions (i.e. ACADE 2012 / 2013 / 2014 being same drawing format). For ACADE 2015 onwards there is a schema change in catalog database so you can not use this method for atleast catalog database to use.

Secondly, you need to make sure correct paths in OPTIONS dialog box to avoid the symbol insertion as those are critical paths getting used in different symbol standards.
