This is probably a CAD question but, since I am using Civl 3D 2012 I'll ask it here:
I had created a .stb file in order to print in color, and those colored lines with the thickness I want to display. However, I am unable to "map" (I guess) the .stb file I created. If I go from an existing .stb, I cannot add any more styles (the exsting .stb has an icon when I go to the "Plot Style Table Setting" and the new one doesn't.

You're in the wrong place. Go to PageSetupManager, Modify. You can edit ("map") your STB file from there.

Notice how your Properties palette says "By Color" under the Plot Style section? That indicates the DWG is configured for CTB, not STB, which will automatically filter for CTB files.
Use the Convertpstyles command to switch from ctb to stb dependent.
When typing convertpstyles I get the following message:
This command converts a Color Dependent plot style drawaing to use Name plot styles.
You should convert your color dependent plot style tales (,CTB files) to Named plt styles (.STB file) with convertctb before you convert your drawing.
I convert a .ctb file. it only gives me 9 styles to work with & modify. I cannot add any more styles (for some reason). Then..I get stuck.
