Profiles

Is an alignment the only object that a profile view can be created from? I wanted to create a profile with my surfaces, and to show cut and fill, but everything that I have read so far only shows examples of profiles for alignments.

No

You can create a quick profile along any line or polyline. But...

By definition a profile plots changes in elevation along some line - why not an alignment since it is the basic civil engineering measuring stick?

Thank you

I have a surface, without any alignments.

Is there a command for a quick profile?

You can find it on the Home tab of the Ribbon.  Fair warning however - quick profiles are temporary.  When you save or close the drawing they are gone.
