By creating a viewport in your layout that will accommodate a profile
view of the desired height.

When profile views are created through the Plan Production feature, the
height is automatically determined based on the height of the profile
view viewport in layout and the specified scale, including allowances
for any annotation specified by the profile view style.
The first profile views will have its datum set to the lowest elevation
of the profiles in that view. If you are using split profile option,
then the views will be split within that view.
The reason why profiles "with the grid [appear] off" is that the datum
is the lowest elevation of the profile, and if you have a relatively
flat profile, it will appear near the base of the profile view. In
these cases it would be best to adjust the elevation range so that the
profiles appear near the middle for a more pleasing appearance, as
another poster, pcmanojkumar suggested.
Keep in mind that if you modify the profile view properties after
generating sheets, you may modify it such that it does not fit within
the profile view viewport in layout.
Hope this explains how the tools work.
