I am joining plines on the same layer, etc. I was taught to use PEDIT-Join but noticed that I can do the same function with just the JOIN command. Is there any difference? Is one better/safer to use?

I concur on this assessment of the two. Although I find myself using mpedit when I have multiple lines and curves to join into a polyline.

if you have 2 lines whereas one is the extension of the other (line1 and line2 at the same angle) you'll see a difference in the resulting vertices.
_PEDIT ==> _JOIN results in 2 polyline-segments,
_JOIN (as command) results in one new line starting at startpoint from line 1 and ending at endpoint of line 2

Therefor you can use command _MAPCLEAN with the options "Dissolve Pseudo Nodes" and "Simplify Objects"shown in the video, it's not exact the same as it also connects items that are not exact the same angle (depending on the value of the tolerance), but it's great for generalizing and the wish you have I think.
Run the command twice, as simplify can't work on the separeted lines/in the first pass.
