Labelling profile with Description

How can I show the description (in this case, MUDSTONE) in a profile label? I've tried modifying the style but the description refuses to appear even though it is one of the available labels

It looks to me like you are adding a ProfileView label. You would need to add a ReferenceText component for the Profile and use the description for that. My guess is you've chosen description, but it is for the ProfileView.
