Publish to PDF is right there when you right click on a Sheet Set (or selected Sheets). That would publish out usung DWG to PDF. If you want to use External driver (Adobe PDF, etc...) then setup Page Setup overrides then use them, from the right click menu as weel.

as an alternative to going back into existing drawings to make a page setup in each and every drawing, you can publish your sheet set of drawings to a dwf and *then* print that dwf to a pdf using an external pdf driver (this is for if you're looking to use the external driver).
(and yes I know you can import a page setup into all your files to use to print with.. but that only works if the plotting setup is the same for all drawings.)
