new student unable to change plot styles

New student here, 4th week of my first AutoCAD class. Homework includes changing plot style for a new drawing but the textbook method does not work nor does any solution I find online (but as a noob I do not understand some of the responses I see to similar questions).

Objective is to change from the default plot style to acad.stb. Not .ctb, .stb.

Textbook method that does not work:

right click drawing field, select 'options'

Plot & Publsih -> select Plot Style Table Settings

at Plot Style Table Settings -> select Use Named Plot Styles

from the default plot style dropdown, select acad.stb

click ok

click ok to close options dialog

close the drawing then open a new one

result: no change in layer properties...should say ByLayer? IDK, but it still says ByColor (default)

with 4 weeks CAD experience I don't know how to sort this out, homework is stalled, anyone who can help without snark please respond

The instructions are OK but incomplete.  When you start the new drawing, use CTRL+N or the new command and select Open without template - Imperial or Open without template - Metric.

Do not use one of the built in templates (which already have a plot style chosen for you)!

@Patchy is correct if you want to convert the plot style for an existing drawing from ctb to stb.

Once you have a drawing with an STB plot style launched, save it as a template with some hint about the plot style selection such as

acadstb.dwt or mystyle-stb.dwt

BTW, you don't need to do this unless you plan on using the CTRL+N with the Open with no template option.  There are OOTB templates such as acad-Named Plot Styles.dwt which you can launch right away.
