or are you trying to dimension a radius of more than one unit, e.g.R 1-1/4"  and have it display as R5/4" ?

I should add that I do not want to change all dimensions, but only one single dimension.

After placing the radius dim, click on it, open properties, go down to dim primary units, change from decimal to architectural.
