I have multiple paper spaces to show a variety of drawings. I currently have my floorplan as a viewport, but I need to delete it in order to add in my elevations. I tried deleting my current viewport, but it also deletes the rest of mine. How do I delete a viewport from only one paper space, so that it does not interrupt with my other drawings?

In normal cases you go to this layout, select the viewport and press <DEL> (or use command _ERASE).
That does not influence any other layout, that does not influence any other drawing.
If it really does I would think of an application or tool running on top of AutoCAD then.
