I have a question concerning editing blocks in multiple files.
If a block already exists in multiple files, is there a way to change it in one of them, and then have this change applied to all the others?

Once inserted, the block definition exists in the drawing, so no, there is no way to have the changes automatically reflected in other drawings. To update, you'd have to re-insert/redefine the block in each drawing where the block already exists, either manually, or via a Script.
xref's, would behave as you described
You need WBLOCK out the new definition of the block first, then use a script to update other drawings.

Here's one way to do what you are asking but it doesn't work exactly universal.
Open the drawings where you want the block to change definition.
Open Design Center
Select the block in Design Center.
You will have options when you right click on it to do several things including "Redefine Only". Without inserting it it will update all the blocks in that drawing.
You will have to repeat for all drawings but it is far less painful than reinserting each and every instance in each drawing.
