I am controlling change orders via the API using Vault Pro 2011. When emails are sent via the application I've created, no matter who the user is that is logged in, my email address (I am the Vault admin) is listed as the originating email address. Where do I look (inADMS?) to change that email address to a generic one that we intend to use.

I don't think the email settings can be configured through the API. Try the ADMS Admin Console.
ADMS server console, Tools, Admin, Advanced Settings tab, Email config., email from. change this to your where you want the responses to go to.
