How do I go about making a material (mapped texture) from a view that one of my camera sees?
I have what will be a projection screen in my model and want it to display what one of my scene camera sees at all times.

"Camera Map Per Pixel Map" should work for what you're trying to do.

I'm not sure that is it.
It seems I could just do one render of what the camera sees and save that as a jpg (or such), and then map that jpg as a bitmap texture to my screen. That saves a bunch of time and is less steps.
I'm trying to see if I can set up the material to always be what the camera sees, even if it moves. Is this possible?
The steps you provided seem to say I need to render twice for every different location of the camera. Was I reading this right?

I see what you mean now. Yes, you can render just once. The second render is for Z-depth and is optional.
If I understood correctly, then Camera Map (World Space) Modifier may be what you're looking for. If you move the camera, the texture map coordinates will move as well.

If you were doing something like a slide projection, you can use a reguar Target Light and assign a bitmap to the Projector Map slot. This basically projects the bitmap onto the objects in the scene.
