How would anyone here go about doing a soffit wall where the GWB needs to
wrap around the bottom?

Its a lower ceiling grid that meets a soffit before a higher ceiling grid.

Build the soffits walls with an offset from the floor, then build the ceiling soffit as a compound ceiling, use the wall you created as the "pick wall" for the ceiling, then join geometry should clean it up.
