We have Revit 2014 installed out of the box in english version.
We installed then the French Language pack to have the French version.
We've found that the language pack updated the family libraries to the ffrench_INTL version. We want to have the Canadian version of the libraries.
Is there something we're doing wrong?
Is it possible to download again the Canadian Libraries?
We've tried with Control panel>Add Remove program>Add Remode feature but we only got the family templates ant project templates and no libraries.

During the installation of the Revit 2014 French language pack, there is an option to select the default content to be used when running Revit from the French shortcut. By the way, the same option is available in the original Revit 2014 installer and it drives the default content to be used when running Revit from the original English shortcut.
Getting back to your question, there are two ways you change the default content associated with your French version of Revit 2014.
Based on your last paragraph, it sounds like some of the Canadian content was not installed properly so my recommendation would be to uninstall the Revit 2014 French language pack and reinstall it. When you are reinstalling this language pack, make sure you expand the product entry on the configure installation page, then enable the checkbox associated with the Canada content pack as well as set the default content to Canada. After that, you can collapse the product entry and complete the installation.
