Those are NOT keyboard shortcuts. When you press the ALT button what you see are "keytips" they are part of the Windows WPF (Ribbon) implementation. They are just a way to navigate a Ribbon interface WITHOUT a mouse. Keyboard shortcuts on the other hand actually execute the command in the application without the use of the UI at all. So the two are similiar but different in one significant way in that one actually executes a command while the other just provides a path to the correct UI portion where the command can be executed.
In addition to the location of keyborad shortcuts on the view>user interface section of the Ribbon you can also get to the keyborad shortcut definitions from the application menu (big "R"). In the applications menu select options and then look on the User Interface section of the options dialog box.
