Regarding Mold Design I found only some short videos, nothing really new. But IMHO you could try to use what's on Autodesk WikiHelp on 2011 version, and there is a great tutorial by our fellow EE, JDMather - http://home.pct.edu/~jmather/content/DSG322/Inventor%20Tutorials/Inventor%202011%20Tutorial%2014.pdf
Also not for the up to date version, but it will give you a gist of what's what.

Going way back to when it was first introduced the Mold design environment was called Inventor Tooling.
Originally there was a book published by Autodesk back then - but I haven't seen any book since.
