Assembly cut out

In an assembly, is it possible to make a cut out on a part such that I can see
the parts behind through the cut? If so, how is this done?

Look into break-out sections

Sounds like you are looking for Breakout views. You should be able to find them in Help

As the others stated broken sections are the way to go. I just figured them out yesterday. Some bumps in the road I had were getting the sketch associated with the view that the broken out section is in and depth.

depth is the easy one depth is NOT a negative distance. Yes I put a - value in and got nothing. Yes it makes all the sense in the world but sometimes that happens.

sketching in the view wasn't too difficult either.
I found highlighting in the browser was easier than picking the views.(some of mine overlap each other.) then hit the sketch button. the sketch grid did not always look OK whe I did that and I don't know why. once it was smaller than the view and looked incomplete and twice it was larger than the view. I am not sure why but it worked all 3 times.

When it did not work was when my sketch was not under the view in question. I just deleted it and redefined the sketch properly.

You can pick on geometry to set the depth as well.
