The speed of the motion is controlled by the distance/angle and the step range. For a revolute gear, you might set the angle to 90 - 85 deg from step 10 to 20 then 85 - 5 deg from step 20 to 40 then 5 to 0 from step 40 to 50.
The video shows this with the landing gear movement starting at the 2:50 mark. It moves quickly for the first 60 deg then slows for the end of the motion.

I come from an animation background where the inertia of objects is often simulated by easing in and out the first and last few frames of a motion - I just wondered if the motion graph will have bezier handles on the key frames so as to control the curves.

Now I understand what you are after. No, Motion Studies does not have that type of control. The best you could do is what I described above.
