So,
I am working my way through the video Tutorials creating written documentation of each step.
At some point I went to save and noticed that the save icon was missing (I have an initial image in my document where it was there in the beginning).

At some point I create another file and close it. (maybe an hour after I realized no Save icon on the first file)
Working along and try to do a Split Face much later and Fusion crashes.

So I go to reopen my file and it is not there. Was never saved.
The second file that I did start while working on this one is there, but not the first file.
All is lost.
I'll keep searching, but this isn't looking good for classroom instruction.
As I (attempt to) track this down - going through the screen capture images in my Word.doc it seems like I should at least have 3 old versions. Somewhere!
Did you by any chance try the Reset Default Layout command to see if it would bring back the Save command?
Also, given the other post about the number one problem (nice pun by the way), I am curious what the DPI settings on your machine are.
If you browse to Control Panel\All Control Panel Items\Display, check to see that the settings are set to Smaller-100%.
Also, check the Set Custom Text Size (DPI) setting are set to 100%.
I've seen the setting cause issues with the Ribbon in Inventor. I haven't seen this in Fusion 360, but I thought it may be worth mentioning.
Are you running an expired Trial by any chance? I believe the counter should be on the home page of your Dashboard. I don't believe the Save command should disappear because the trial sudently expired.
If it was saved, it should show up in your recent files or activity feed in the home page of the Dashboard. It may be necessary to refresh the dashboard home page.
Finally, could you browse to C:\Users\<UserName>\AppData\Local\Autodesk\Autodesk Fusion 360\<Product Version ID> (look for the latest modified date) and find the most recent “AppLogFile….log. If possible, could you upload it to this post or e-mail me directly at Nathan (DOT) Chandler (AT) Autodesk (DOT) com? This should contain a log of the upload queue for Fusion 360.
