Overlapping plate elements

I am curious as to how simulation deals with plate elements that overlap.  Can accurate results be produced?  Is the thickness considered the combined thickness of the two plates?  If it is the case that simulation combines the thicknesses, it would save me some time when drawing models.  In my situation the plates are of the same material.

No.

The geometry of plate element in the simulation is defined by its thickenss and mid-surface. So if you overlap two plate element with same thickness and same size, then they occupy the same space. 

For ease of modeling, I'd rather recommend you start with one plate part and divide it into multiple plate part then, assign different thickness.
