Various thickness on plate?

Hello - I have two questions, hope you can help me.
Q1)
I was designing a plate of varying thickness, but the slope appers on the underside of the plate.
This certainly plays no role in the calculation, unless the plate merges with another plate.
But is there a way to turn it right?
Q2)
I also have problem to create a various thickness on a non rectangular plate with just 3 insert points.
How can I make various thickness on the plate in attached file?

It is a panel thickness visualization for Plate structure type.Change structure type onto Shell.
